My New Favorite Cookies

I've always been a cookie lover.

Cookies were one of the very first things I learned how to bake. Not only are they easy, but they're delicious, hand held, and perfect for kiddos.

My only hangup with cookies is the perfect recipe is pretty hard to find. There's so many variations, and if one thing is off, the whole cookie is off. And when you're trying to go sugar or gluten-free? Forget it. They all taste like cardboard.

Not anymore.

I'm so freaking excited to have found this recipe! These sugar free, protein packed cookies are only five ingredients - that's my jam. I'm obsessed. I've made 3 batches of these in the last week (thanks quarantine) and can't seem to keep them longer than a few days before they're all eaten! Between myself and the kids, these cookies are a real winner.

Sweet but savory and very filling. Perfect for post workout or just as a quick snack, you really can't go wrong with these!

What you'll need:

1 C pitted dates (roughly 8)

1 Banana

3/4 C Almond Meal Flour

3/4 C Rolled Oats

2 Tbsp Almond Butter

1. Preheat oven to 350 degrees. Line a baking sheet with wax paper.

2. Blend all ingredients in a food processor.

3. Roll batter into teaspoon sized balls. Flatten and place on wax paper.

4. Bake for 13 to 15 minutes.

5. Enjoy!
